Apple Crumb Cake

Ingredients

3 cups rice flour

1 cup sugar

½ cup canola oil

2 egg yolks

7 TBSP cold water

5 apples, peeled and cored, cut in to thin slices

½ tsp cinnamon

1-2 tsp natural lemon juice from freshly squeezed lemon

1-2 tsp brown sugar

450 grams rice flour

200 grams sugar

118 ml canola oil

2 egg yolks

7 TBSP (105 ml) cold water

5 apples, peeled and cored, cut in to thin slices

½ tsp (2.5 ml) cinnamon

1-2 tsp. (5-10 ml) natural lemon juice from freshly squeezed lemon

1-2 tsp (5-10 ml) brown sugar

Preheat oven to 350° F (180° C).
To prepare the dough, mix rice flour and sugar in a large mixing bowl.
In a separate bowl, whisk the yolks, oil, and water.
Add the egg mixture to the flour mixture and mix until a crumbly texture is achieved.
Set aside 1 cup (236 ml) of the dough mixture and press the rest of the dough into a lightly greased cake pan (no. 26).
Sprinkle the apple slices with cinnamon, lemon juice, and brown sugar.
Arrange apple slices over the dough, and then add the remaining dough crumbs on top.
Bake for 40-45 minutes until golden.
Once the cake is cool, cut into squares and serve.
