Ingredients

1 Cup Uncooked Old-Fashioned Oats

1 Cup Kefir

1 Egg, Lightly Beaten

2 TBSP Canola Oil (or can substitute with olive oil or avocado oil)

1 TBSP Raw Honey – Local is best

¼ Cup Oat Flour *See Note Below

1 tsp Baking Soda

Pinch of Salt

1/8 tsp ground cinnamon (optional)

237 ml Kefir

1 Egg Lightly Beaten

2 TBSP (30 ml) Canola Oil

1 TBSP (15 ml) Raw Honey

23 grams Oat Flour *See Note Below

1 tsp (5 ml) Baking Soda

Pinch of Salt

1/8 tsp (.625 ml) ground cinnamon (optional)

Instructions

  • Stir oats and buttermilk or kefir together, cover, and refrigerate overnight.
  • In the morning add the egg, canola oil, and honey; stir well.
  • In a separate bowl, mix the oat flour, baking soda, and salt.
  • Stir this into the buttermilk mixture just until blended.
  • Preheat waffle iron and cook - waffles are done in about five minutes or when the flow of steam from waffle iron has slowed.

Notes

Regarding oat flour: it is available in some stores, but you can also make it, by putting old fashioned, uncooked oats into your blender, and pulsing a couple of times. Voilà - oat flour! Of note - almond flour also works well in this recipe.
