Instructions

  • Beat egg yolks.
  • Add ground almonds, salt, and lemon rind to yolks and mix.
  • Fold in stiffly beaten egg whites.
  • Heat oil 1-inch (2.5-cm) deep in skillet.
  • Drop batter by teaspoonful into skillet and fry until golden brown.
  • Drain on brown paper.
  • Serve in soup.
