1 tsp baking soda

1 tsp (5 ml) cider vinegar

Instructions

  • Mash bananas thoroughly in food processor.
  • Add eggs and process until smooth and creamy.
  • Add melted butter, honey, salt, and baking soda and process until thick and buttery looking.
  • Mix in almond flour and vinegar.
  • Add raisins and process just long enough to mix well.
  • Line bottom of loaf pan with baking paper and pour in mixture.
  • Bake at 350°F (180°C) for about 50-55 minutes until a knife blade comes out clean when tested.
  • Leave in tin for 10 minutes before turning out onto wire rack to cool.
