2 mangos

1 large spanish onion, finely sliced

ginger (1/2 the amount of onion), ground

butter

Instructions

  • Slice the chicken in small pieces or leave large.
  • Sauté the chicken in butter and remove it.
  • Sauté the finely sliced onion, ground ginger, and mango until onion is soft.
  • Add some pineapple juice and water and a handful of raisins and simmer for few minutes.
  • Add the chicken back in the pot.
  • Simmer for few more minutes until the raisins are plump.
