1 cup raisins

½ cup honey

1 cup almond flour

¼ tsp nutmeg (or to taste)

¼ tsp cinnamon (or to taste)

¼ tsp (1.25 ml) nutmeg (or to taste)

¼ tsp (1.25 ml) cinnamon (or to taste)

Instructions

  • Preheat oven to 350°F (180°C).
  • Grease a 9x13-inch (22.9x33-cm) pan.
  • Soak raisins in hot water to plump, and drain them.
  • Mix first five ingredients.
  • Beat eggs and stir in oil.
  • Combine egg mixture with carrot mixture.
  • Combine dry ingredients and mix with everything else.
  • Pour in greased pan and bake for about an hour.
