Instructions

  • Beat together the egg yolks, water, honey and salt until well mixed.
  • Stir in the dry curd cottage cheese.
  • Add almond flour, stirring until thoroughly blended.
  • Mix in raisins.
  • Beat the egg whites until stiff peaks form and fold into cheese mixture.
  • Add oil to large skillet until it is about ⅛-¼ inch (0.3-0.6 cm) deep and heat.
  • For each latke, drop about ¼ cup cheese mixture into hot oil.
  • Fry on each side until golden brown.
  • Add oil to pan as needed.
  • Drain latkes well on absorbent paper.
  • Serve hot with french cream (SCD yogurt made with half and half or cream) or applesauce if desired.
