½ cup soft butter

⅔ cup honey

1 egg

1 cup almonds or hazelnuts, chopped

1 cup raisins, chopped

½ cup chopped dates (if desired)

1½ cups compliant apple sauce

1 tsp cinnamon

1 tsp vanilla

2 cups almond flour

2 tsp baking soda

110 grams almonds or hazelnuts, chopped

160 grams raisins, chopped

88 grams chopped dates (if desired)

355 ml compliant apple sauce

1 tsp (5 ml) cinnamon

1 tsp (5 ml) vanilla

200 grams almond flour

2 tsp (10 ml) baking soda

Instructions

  • In food processor, coarsely chop almonds/nuts, raisins and dates (if desired).
  • Place in separate bowl.
  • Cream butter and honey in food processor, add egg and vanilla.
  • Mix all other ingredients together and add to the butter mix.
  • Turn into a well buttered cake pan (sprinkled with almond flour).
  • Bake in slow oven at approximately 315°F (157°C) for 1 hour until center comes out clean with fork.
