Ingredients

1 ripe banana

1 egg

¼ tsp baking soda

2 TBSP almond flour (approximately)

3 TBSP SCD cottage cheese (farmers cheese and SCD yogurt)

Instructions

  • Mash the banana in a shallow bowl with a fork.
  • After it is mashed, push it to one side of the bowl to make room for the egg.
  • Add the egg and baking soda and scramble until soda is dissolved.
  • Add flour to the egg mixture until desired batter consistency is reached.
  • Pour out three pancakes onto a greased flat medium hot grill.
  • Cover the grill with a cookie tray to help form the delicate cakes.
  • Cook for about 3 minutes on one side (or until they are formed enough to flip).
  • Flip, cover, and cook for another two minutes.
  • Put one TBSP of "cottage cheese" on each half of the cake and fold in half.
  • Serve topped with compliant syrup of your choice.
