Ingredients

5 cups steamed, mashed cauliflower

2 onions, chopped

⅓ cup oil

4 eggs

½ cup dry curd cottage cheese

½ cup almond flour

2 tsp Kosher salt (less if regular salt)

pepper

nutmeg, pinch or more to taste

⅛ tsp baking soda

50 grams almond flour

2 tsp Kosher salt (less if regular salt)

Instructions

  • Preheat oven to 375°F (190°C).
  • Place cauliflower in a clean tea towel and twist ends to remove liquid.
  • Sauté onions in oil on medium heat until golden brown and caramelized.
  • Blend eggs, dry curd cottage cheese, seasonings, and baking soda together in a food processor until texture is very smooth.
  • Mix all ingredients together and put mixture into a well oiled 8x8x2-inch (20.3x20.3x5.1-cm) Pyrex pan.
  • Bake at 375°F (190°C) for 50-55 minutes or until browned.
  • Cut into squares to serve. Enjoy.
