Ingredients

cauliflower (cooked then mashed to "mashed potato" texture)*

carrots (chopped up in small pieces to speed up cooking)

1 white onion, chopped

celery, chopped

ground lean beef

homemade beef stock broth

chili powder (lots!)

oregano (fresh is the best)

salt

pepper

parsley

Instructions

  • Preheat oven to 350°F (180°C).
  • Add chopped carrots and cauliflower into a pot of boiling water.
  • Cook until soft.
  • While waiting for the vegetables to cook, place lean beef on a frying pan.
  • Break beef apart with fork to achieve 'scrambled beef'.
  • Add the homemade beef broth (this adds a lot of flavor to the beef).
  • Chop up the onions, celery, and fresh oregano, and add chili powder and salt and pepper at this point.
  • When beef is almost cooked, add all ingredients except the carrots and cauliflower (including spices) to the beef.
  • Let them sauté with the beef until beef is fully cooked.
  • Add more spices if desired.
  • Drain cauliflower and carrots, leaving a little bit of water in the pot to help with the mashing.
  • If desired, add butter and salt to the mashed mixture.
  • Add the ground beef mixture to the bottom of a casserole dish, then spread the cauliflower/carrot mash on top.
  • Bake covered for ½ hour. YUM!
