2 TBSP butter

2 small or medium zucchini, coarsely shredded

lemon juice

salt and pepper to taste

Instructions

  • Sauté nuts in butter until lightly browned (be careful not to burn.)
  • Remove nuts from heat.
  • Sauté zucchini briefly--about 1-2 minutes in the same pan.
  • Sprinkle with a few drops lemon juice and season with salt and pepper
  • Add nuts, toss and serve. YUM!
