1½ TBSP olive oil

1½ tsp garlic minced

½ cup onion sliced

1 cup tomatoes diced

1½ TBSP basil (fresh chopped) (or use 1 tsp dried)

salt and pepper to taste

1½ tsp (7.5 ml) garlic minced

26 grams onion sliced

200 grams tomatoes diced

1½ TBSP (22 ml) basil (fresh chopped) (or use 1 tsp [5 ml] dried)

salt and pepper to taste

Instructions

  1. Heat oil in heavy skillet.
  2. Add zucchini, onion, garlic.
  3. Cook until just soft.
  4. Toss in tomatoes and seasoning.
  5. Cook 2 minutes.
  6. Remove from heat and sprinkle with cheese.
  7. Serve warm (optional: with chicken or pork if compliant with dietary needs)
