Instructions

  • Peel bananas and place in a medium bowl.
  • Mash well with a fork.
  • Add the eggs to the bowl and stir until you have a custard like consistency. The batter will be runny and have some small chunks of banana.
  • Heat a griddle or large skillet over medium heat.
  • Lightly coat with canola oil.
  • When the pan is hot, spoon on 2 TBSP (30 ml) of batter for each pancake.
  • Cook for 1 minute, until the bottoms are browned and golden when lifted.
  • Gently flip and cook for another minute on the other side.
