Ingredients

1 package of thin rice noodles (noodles containing rice flour only).

1-2 TBSP canola oil

2-3 TBSP honey

½ tsp cinnamon

Strawberries and bananas or slice of apple may be added as topping

½ tsp (2.5 ml) cinnamon

Instructions

  • Pre heat oven to 400°F (200° C).
  • Break the rice noodles into smaller pieces.
  • Add the rice noodles into a pot of boiling water.
  • Reduce heat to low and cook the noodles for half the time specified in their cooking directions.
  • Drain the noodles and rinse well with cold water.
  • Drain the noodles and place in a bowl.
  • Add canola oil and mix until all the noodles are coated.
  • Add the honey and cinnamon, mix well.
  • Spread the spiced noodles in a layer on to a baking sheet and bake for approximately 40 minutes.
  • Stir and flip noodles every 15 minutes; keep the layer even.
  • When the cereals are removed from the oven, a crackling sound will be present that indicates that the noodles are ready.
