Ingredients

8-12 chicken thighs (bone-in; skin-on)*

10 medium carrots, peeled and cut into 3- to 4-inch segments

8-12 cups water (approximately 1 cup per chicken thigh)

1-2 TBSP salt or to taste

Instructions

  • Place chicken pieces in the Instant Pot.
  • Add the carrots.
  • If you are not doing SCD intro and would like to add optional vegetables of your choice, like onions and celery, add them to the pot.†
  • Cover the contents in water (approximately 8-12 cups), but do not exceed the maximum capacity of your Instant Pot.
  • Add salt.
  • Place the lid on the Instant Pot and turn to seal.
  • Close the venting valve.
  • Set the Instant Pot to Pressure Cook, Manual, or Soup for 30 minutes.
  • When the Instant Pot finishes, allow to naturally release. The whole process of coming to pressure, cooking, and natural release can take about 2.5 hours.
  • When the gauge drops and it is safe to open the pot, remove the pot with pot holders and strain the broth out into a separate large bowl.
  • Let set for a bit and then spoon off some of the excess fat from the top of the broth (you do not have to spoon it all off).
  • Remove the chicken meat from the bones/skin and set aside, discarding the bones/skins/ligaments.
  • Place the well-cooked carrots in a blender and add a cup or two of broth.
  • Blend to create a carrot purée that is somewhat watery.
  • Stir the carrot purée back into the broth until well combined.
  • Add the chicken meat to the soup and serve.

Notes

*You can use other bone-in chicken pieces, but thighs have only one bone to remove, so are easier to work with. †If you are not on SCD Intro, you can add other vegetables to the broth for flavor and season as you like: for example, 2 chopped onions and 3 stalks of celery (cut into 2- to 3-inch [5- to 8-cm] pieces), strained out when soup is done.
