1 tsp dry mustard

Instructions

  • In small saucepan, stir together egg yolks, lemon juice, water, mustard, and pepper until mixed.
  • Cook over very low heat, stirring constantly.
  • When mixture bubbles in a few spots, remove from heat.
  • Let stand 4-5 minutes.
  • Pour into blender or mixer.
  • Blend on high.
  • Slowly add oil.
  • Blend until thick and smooth. Stop and start to scrape sides down to get an equal mixture.
