Ingredients

2 pounds salmon or bluefish

3 cups chopped tomatoes

1 cup chopped onion

1 cup chopped olives

1 large clove minced garlic

¼ tsp ground cumin

1 TBSP honey

¼ cup lemon juice

3 TBSP olive oil

1 TBSP chile powder

¼ tsp ground cloves

¼ tsp ground coriander

180 grams chopped olives

¼ tsp (1.25 ml) ground cumin

1 TBSP (15 ml) honey

59 ml lemon juice

3 TBSP (45 ml) olive oil

1 TBSP (15 ml) chile powder

¼ tsp (1.25 ml) ground cloves

¼ tsp (1.25 ml) ground coriander

Instructions

  • Chill the fish in a little lemon juice and sprinkled with salt.
  • Preheat the oven to 350°F (180°C).
  • Sauté the onions, garlic, and spices in oil.
  • Add tomatoes, honey, olives, and lemon juice, and simmer 15 minutes or so.
  • Pour sauce over fish.
  • Season with salt, pepper, and parsley
  • Bake 20-30 minutes at 350°F (180°C).
