Ingredients

8-10 Roma tomatoes, skinned and chopped

1-2 cloves garlic, minced fine

½ pound mushrooms (cremini are nice), chopped

8 sundried tomatoes

¾ pound ground beef

1 TBSP olive oil

1 tsp dried basil

1 tsp dried oregano

1 tsp salt

pinch dried red pepper flakes (optional)

1 TBSP (15 ml) olive oil

1 tsp (5 ml) dried basil

1 tsp (5 ml) dried oregano

1 tsp (5 ml) salt

Instructions

  • Pour 1 cup boiling water over sundried tomatoes and let soak until soft.
  • Chop sundried tomatoes and reserve soaking water.
  • Put chopped Roma tomatoes, sundried tomatoes, and soaking water in large pot.
  • Sauté mushrooms and garlic in olive oil and add to tomatoes.
  • Sauté ground beef, drain fat as desired, and add to tomato/mushrooms.
  • Add spices.
  • Heat pot to boiling over medium heat and reduce to a simmer.
  • Simmer, covered, at least one hour.
  • Taste and adjust seasonings if necessary.
  • Enjoy over spaghetti squash, winter squash, and steamed vegetables.
