Apple Discs

Sweet, vegan apple-cinnamon dumplings made in the air-fryer. Great as dessert with some vegan ice-cream or on its own as a warm, sweet and spicy snack.

Ingredients

20 Dumpling wraps

1 Apple

1/4 cup pecans

1 TBSP cinnamon

1 tsp vanilla extract

3 TBSP honey

2 TBSP olive oil

Optional:

Honey

Cinnamon

Vegan vanilla ice cream

1/4 cup (30g) pecans

1 TBSP (15 ml) cinnamon

1 tsp (5 ml) vanilla extract

3 TBSP (45 ml) honey

2 TBSP (30 ml) olive oil

Optional:

Honey

Cinnamon

Instructions

  1. Finely dice apple and chop pecans.
  2. To make the filling, add 1 TBSP olive oil into a pan. Add apples, pecans, cinnamon, corn flour, vanilla extract and honey and mix over medium heat for 5 mins or until apples are soft.
  3. On the side, take a dumpling wrap and spoon 1 tsp of the filling into the middle of it. Create indentations with a fork along the edges of the wrap. Then add another wrap over it to sandwich the filling in between and slightly wet your fingers to seal the edges shut. Repeat this for the remaining discs.
  4. Brush 2 TBSP of olive oil over the discs then pop into the air fryer on 400°F for 20 mins or until crisp. Flip midway.
  5. Optional: Drizzle honey and cinnamon over discs and decorate with pecans.
