1 ripened avocado

1 ruby red or pink grapefruit

optional: bed of spinach

Balsamic Dressing

½ cup olive oil

¼ cup compliant balsamic vinegar

1 tsp compliant Dijon mustard

120 ml olive oil

60 ml compliant balsamic vinegar

1 tsp (5 ml) compliant Dijon mustard

Instructions

  • Cut avocado in half and slice lengthwise. You can then turn the skin inside out (if it's not too ripe!) instead of having to peel it.
  • Peel grapefruit and section it.
  • Arrange slices of avocado and grapefruit on two plates and drizzle with dressing.
  • Optional: Place the slices on a bed of baby spinach

Balsamic Dressing

  • Shake ingredients vigorously in a jar to blend. You may need to adjust quantities to fit your taste.
